Beautiful Butterfly Cake

Beautiful Butterfly Cake

  • Prep Time: 15 minutes
  • Total Time: 1 hour 45 minutes
  • Servings: 16

Ingredients

  • 1 (2-layer size) pkg. yellow cake mix
  • 1/3 cup raspberry jam
  • 12 OREO Cookies
  • 1 (8-oz) tub COOL WHIP Whipped Topping, thawed, divided
  • Food coloring
  • 1 cup fruit-flavored, sweetened rice cereal
  • Decorations:
  • Assorted ring-shaped hard candies
  • Mini OREO Bite Size Chocolate Sandwich Cookies

Directions

  1. Prepare cake batter and bake in two 9" round baking pans as directed on package. Cool 10 min.; remove to wire racks. Cool completely.
  2. Cut cakes crosswise in half. Spread two of the cake halves with jam; top with remaining two cake halves to form two stacks.
  3. To assemble, arrange cookies in center of large board or tray with edges slightly overlapping to form the "butterfly's body," securing cookies to each other with small amount of the whipped topping.
  4. Arrange cake stacks around body to resemble the butterfly's wings.
  5. Tint remaining whipped topping with food coloring as desired. Spread onto cakes.
  6. Decorate with whipped topping, cereal, candies and cookies. Store in refrigerator.

For a refreshing citrus cake, prepare as directed using lemon cake mix and substituting orange marmalade for the raspberry jam.
Substitute any flavor cake mix for the yellow cake mix.

Hidden Treasure Chest Cake

  • Total Time: 30 minutes
  • Servings: 10

Ingredients

  • 4 squares BAKER'S Semi-Sweet Chocolate, chopped
  • 1/2 cup whipping cream
  • 1 (12-oz) pkg. pound cake
  • 1/2 cup powdered sugar
  • 34 yellow candy-coated chocolate pieces
  • Candy necklace
  • 1 candy bracelet
  • Foil-wrapped chocolate coins
  • Pieces of red string licorice (6" each)
  • NILLA Wafers, crushed

Directions

  1. Microwave chocolate and cream in large microwaveable bowl on medium (50%) 2 to 3 minutes or until chocolate is completely melted.
  2. Stir after 1-1/2 minutes until mixture is well blended. Cool slightly.
  3. Gradually add powdered sugar, beating with electric mixer on high speed until mixture is well blended and of desired spreading consistency.
  4. Use a serrated knife to cut off top one third of cake. Set top aside.
  5. Place bottom of cake on large serving platter; spread with chocolate frosting. Scatter candies and some of the coins around cake as desired.
  6. Replace top of cake; spread with the remaining chocolate frosting to resemble a treasure chest.
  7. Decorate top of chest with string licorice and some of the remaining candies. Sprinkle wafer crumbs onto platter to resemble sand. Arrange any remaining coins and candy in "sand." Store in refrigerator.

Size It Up: Have fun with your kids making this special cake, and then teach them about portion control.

How To Frost A Cake: If the cake is very soft and crumbly, apply a "crumb coating" to prevent cake crumbs from mixing with the frosting. Spread a thin layer of frosting over the entire cake, then let stand 5 to 10 min. or until frosting is set. Spread remaining frosting over cake.

Skateboard Cake

  • Prep Time: 20 minutes
  • Total Time: 1 hour 20 minutes
  • Servings: 15

Ingredients

  • 1 (2-layer size) pkg. white cake mix
  • OREO Cookies
  • 1 Tbsp decorating icing
  • Chocolate-filled rolled wafer cookies
  • 2 cups thawed COOL WHIP Whipped Topping
  • Food coloring
  • 36 assorted candy-coated chocolate pieces
  • 2 Tbsp decorating gel

Directions

  1. Prepare cake batter as directed on package; pour into one 9" round cake pan and one 13x9" baking pan, making sure that the level of batter in each pan is the same.
  2. Bake as directed on package for each pan size. Cool in pans 5 minutes; remove to wire racks. Cool completely.
  3. Spread tops of 4 of the OREO Cookies with some of the icing; top each with second OREO to resemble a skateboard wheel. (You will have a total of four "wheels.") Attach one set of cookie wheels to each end of the wafer cookies with the remaining icing; set aside.
  4. Place rectangular cake on large board or platter. Cut round cake crosswise in half; position one half at each short side of rectangular cake, with cut side of round cake against side of larger cake to resemble a skateboard, as shown in this diagram.
  5. Tint whipped topping with food coloring to desired color; spread onto tops and sides of cakes. Sprinkle a few drops of food coloring randomly over top of cake; carefully cut through food coloring with palette knife or spatula for marble effect. Decorate with chocolate pieces as desired.
  6. Use gel to write desired message on cake. Store in refrigerator.
  7. Arrange wheels on top of cake just before serving.

Cooking Know-How: Make sure cakes are completely cooled before frosting. A warm cake can cause the frosting to soften or melt.

Survivor Birthday Party Poke Cake

  • Total Time: 2 hours
  • Servings: 15

Ingredients

  • 2 baked 9" round white cake layers, cooled
  • 2 cups boiling water
  • 2 (4-serving size each) pkgs. JELL-O Cherry Flavor Gelatin
  • 1 (8-oz) tub COOL WHIP Whipped Topping, thawed
  • 1/3 cup OREO Chocolate Cookie Crumbs
  • 1 1/2 cups assorted bug or worm shaped chewy fruit snacks

Directions

  1. Place cake layers, top sides up, in 2 clean 9" round cake pans. Pierce layers with large fork at 1/2" intervals.
  2. Stir boiling water into dry gelatin mix in small bowl at least 2 minutes until completely dissolved. Pour half the gelatin over each cake layer in pan. Refrigerate 3 hours or overnight.
  3. Dip 1 cake pan in warm water 10 seconds; unmold onto serving plate. Spread with about 1 cup of the whipped topping. Unmold second cake layer; carefully place on first cake layer.
  4. Frost top and side of cake with remaining whipped topping. Refrigerate at least 1 hour.
  5. Decorate top of cake with cookie crumbs and fruit snacks. Use small birthday cake sparklers for candles on the cake to represent "torches".

Make-Ahead: Cake layers can be baked weeks ahead and frozen. Thaw layers and continue with recipe beginning with piercing layers with fork in step #1.

Ingredients

  • 1/4 cup boiling water
  • 2 tsp KNOX Unflavored Gelatin
  • 2 (8-oz each) pkg PHILADELPHIA Cream Cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 tub (8-oz) COOL WHIP Whipped Topping, thawed, divided
  • 1 pkg (3-oz) ladyfingers, split
  • Doll pick
  • Few drops red food coloring
  • 2 Tbsp red or pink sprinkles
  • Assorted candies

Directions

  1. Stir boiling water into dry gelatin until completely dissolved; set aside.
  2. Beat cream cheese in large bowl with electric mixer on medium speed until creamy.
  3. Gradually add gelatin mixture, beating on low speed until well blended. Add sugar and vanilla; beat 2 minutes. Gently stir in 1 1/2 cups of the whipped topping.
  4. Spoon one third of the cream cheese mixture into plastic wrap-lined 1 1/2-qt bowl. Stand one half of the ladyfingers, cut-sides in, around side of bowl. Spoon remaining cream cheese mixture into bowl.
  5. Refrigerate 1 hour or until set.
  6. Unmold onto serving plate; remove and discard plastic wrap. Insert doll pick in top of cake.
  7. Tint remaining whipped topping with food coloring; spread over gelatin mold to resemble doll's skirt. Decorate "skirt" with sprinkles and assorted candies.

Size It Up: This is a fun cake to prepare with your child and share with a crowd.

How to Soften Cream Cheese: Place completely unwrapped package of cream cheese in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 seconds for each additional package of cream cheese.
